I don’t know about you, but I am always looking for quick and healthy packed lunch ideas for work. And this morning my good friend Lyna Jones, a nutrition expert and life coach, uploaded this brilliant packed lunch idea to her instagram, a mason jar salad! I immidiately messaged her to get the recipe. Lyna believes in eating a plant-based diet to get what she calls pure energy. So follow the recipe below to put together a couple of your own mason jar salads, stick them in your fridge and you will have a beautiful healthy and nutrious lunch ready to grab and go for the next couple of days. Pure energy packed in a jar to go!

[li]Kale[/li] [li]Quinoa[/li] [li]Red and Black Beans[/li] [li]Chickpeas[/li] [li]Cucumbers[/li] [li]Red Peppers[/li] [li]Red Onions[/li] [li]Red Wine Vinegar[/li] [li]Extra Virgin Olive Oil[/li]
Pour in dressing first (Red Wine Vinegar and Extra Virgin Olive Oil). Then place the ingredients into the jar in the following order, Chopped Red Onions, Cucumbers, Red Peppers, Chickpeas, Red and Black Beans, Quinoa and last the Kale on the top.
